dessert is perfect for the fall, when the whole gang is craving a taste of those caramel apples that seem to be everywhere. Our sticky-sweet Caramel Apple Monkey Bread will more than satisfy! 
What You'll Need:
  • 3 apples, peeled, cored, and cut into 1/4-inch pieces
  • 2 tablespoons granulated sugar
  • 3 teaspoons ground cinnamon, divided
  • 1 tablespoon lemon juice
  • 1 stick butter, melted, plus 1 tablespoon butter
  • 2 (16.3-ounce) cans refrigerated homestyle biscuits
  • 1 cup light brown sugar
What To Do:
  1. Preheat oven to 350 degrees F. Coat a bundt pan with cooking spray.
  2. In a large bowl, combine apples, granulated sugar, 1 teaspoon cinnamon, and the lemon juice.
  3. In a large skillet over medium heat, melt 1 tablespoon butter; saute apples 5 to 7 minutes, or until apples are soft and liquid has evaporated. Let cool.
  4. Meanwhile, cut each biscuit into 4 pieces and place in a large bowl. In a small bowl, combine brown sugar and remaining cinnamon. Pour the melted butter over biscuits, sprinkle with brown sugar mixture, and toss gently until evenly coated. Add apple mixture to biscuits and stir just until combined; place in bundt pan.
  5. Bake 40 to 45 minutes, or until golden and dough is cooked in center. Cool 5 minutes, then invert onto a platter. Serve warm.

Sausage Stuffed Mushrooms

Ingredients

16 extra-large white mushrooms
5 tablespoons good olive oil, divided
2 1/2 tablespoons Marsala wine or medium sherry
3/4 pound sweet Italian sausage, removed from the casings
6 scallions, white and green parts, minced
2 garlic cloves minced
2/3 cup panko crumbs
5 ounces mascarpone cheese, preferably from Italy
1/3 cup freshly grated Parmesan
2 1/2 tablespoons minced fresh parsley leaves
Salt and freshly ground black pepper

Directions

Preheat the oven to 325 degrees F.

Remove the stems from the mushrooms and chop them finely. Set aside. Place the mushroom caps in a shallow bowl and toss with 3 tablespoons of the olive oil and Marsala. Set aside.

Heat the remaining 2 tablespoons olive oil in a medium skillet over medium heat. Add the sausage, crumbling it with the back of a wooden spoon. Cook the sausage for 8 to 10 minutes, stirring frequently, until it's completely browned. Add the chopped mushroom stems and cook for 3 more minutes. Stir in the scallions and garlic and cook for another 2 to 3 minutes, stirring occasionally. Add the panko crumbs, stirring to combine evenly with all the other ingredients. Finally, swirl in the mascarpone and continue cooking until the mascarpone has melted and made the sausage mixture creamy. Off the heat, stir in the Parmesan, parsley, and season with salt and pepper, to taste, Cool slightly.

Fill each mushroom generously with the sausage mixture. Arrange the mushrooms in a baking dish large enough to hold all the mushrooms in a snug single layer. Bake until the stuffing for 50 minutes, until the stuffing is browned and crusty.

German Chocolate Cake (Fresh)

GERMAN CHOCOLATE CAKE


Ingredients

1/2 cup boiling water
4 ounces sweet cooking German chocolate
2 cups sugar
1 cup butter, softened
4 egg yolks
1 teaspoon vanilla
2 1/2 cups cake flour
1 teaspoon baking soda
1 teaspoon salt
1 cup buttermilk
4 egg whites, stiffly beaten


Coconut Pecan Frosting
1 cup sugar ( 1 1/2 cups)
1/2 cup butter ( 3/4 cups)
1 cup evaporated milk ( 12 oz. can)
1 teaspoon vanilla ( 1 1/2 tsp)
3 egg yolks ( 4 egg yolks)
1 1/3 cups flaked coconut ( 2 cups)
1 cup chopped pecans ( 1 1/2 cups)


Directions
Heat oven to 350 degrees F. Grease 2 9-inch square pans or 3 8-inch round pans.
Pour boiling water on chocolate, stirring until chocolate is melted; cool. Mix sugar and butter in large mixing bowl until light and fluffy. Beat in eggs yolk, one at a time. Beat in chocolate and vanilla on low speed.

Mix in flour, baking soda and salt alternately with buttermilk, beating after each addition until batter is smooth. Fold in egg whites.


Divide batter among pans. Bake square pans 40-45 minutes or round pans 35-40 minutes. Check for doneness with toothpick in center. Cool and top with Coconut-Pecan Frosting.

Coconut Pecan Frosting: 
Mix sugar, butter, milk, vanilla and egg yolks in saucepan. Cook over medium heat, stirring occasionally, until thick, about 12 minutes. Take off heat. Stir in coconut and pecans. Beat until spreading consistency. Allow to cool & thicken before icing cake.

Crock Pot Rice Pudding



Crock Pot Rice Pudding


Ingredients:
3 tbsp. butter
6 cups whole or 2% milk (no skim milk - it's too watery)
2 cups Minute® White Rice (uncooked)
3/4 cup sugar
1/4 tsp. salt
1/2 tsp. cinnamon
1/3 tsp. vanilla extract
2 tbsp. brown sugar

Directions:
Grease the inside of a 4-quart slow cooker with butter. Be sure to get the sides too. Set aside the butter for use again in just a minute. Note: You can use a round, oval or casserole-shaped slow cooker. Cooking times may vary slightly when using different shaped slow cookers.

Add the milk, Minute Rice, sugar, salt, cinnamon, vanilla extract and brown sugar into the crock pot.
Give it a gentle stir. Then dot the top with the remaining butter.

Cover and cook on low for about 3-4 hours (stirring occasionally while cooking.)

When the rice is tender, it is ready. Stir well, then top with a sprinkling of cinnamon. This dish will thicken as it cools. If it isn't thick enough for your tastes, just let it hang out for about 30 minutes and it will get thicker. Alternatively, if you want to thicken it, just add a bit of milk until you reach the desired consistency.

Cook's Notes: This dish is traditionally made with raisins added. If you want to add them, stir about a cup of raisins in during the last hour of cooking. Also, to change it up a bit, you could used dried cranberries as well.







Crock Pot Rice Pudding

Let me start by saying that this ain't your Grandma's rice pudding. I feel rice pudding gets a bad rap. It's kinda like fruit cake. Some folks associate these foods with a different generation and not for our 'foodie' generation. They might feel it's too old school or is more for a retirement home than in the hipster homes of today. Well, ya know what? We're bringing rice pudding back. We are taking it back from the dusty old recipe card that sits underneath a stack of highly photogenic food-craft cookbooks. This stuff is good and it's good for any generation. Let me highlight a few of its qualities, shall I?
 
 
 
 
(B.) It has a 5 minute prep time and takes up no oven space. This is a big deal for holiday meals when oven space is at a premium. I made this recipe specifically for the crock pot. I'm using Minute® Rice (makes prep time way faster!) You don't even need a bowl to mix it up. You throw in all the ingredients - BOOM! You got dessert started. And that is my big tip for the holidays right there. Keep the Minute® Rice in your pantry! You can make so much with it and there is minimal prep time (but it still tastes awesome sauce.) And I might add, the Minute® Rice Whole Grain Brown Rice is on point!

Tropical Dump Cake

1 20 ounce can cubed or crushed pineapple
1 15 ounce can tropical fruit
1 package of orange cake mix
1 1/2 sticks of butter
1/2 cup instant oatmeal
1 cup coconut flakes
.
Preheat oven to 350 degrees. Dump both of the fruits & their juices into a 9 x 12 Pyrex baking dish. Pour the dry cake mix on top of the fruit & spread out evenly. Mix oatmeal & coconut & sprinkle over cake mixture with fingers. Melt butter & pour on top evenly. It should cover the entire cake mix. Bake for one hour & serve with ice cream.


Blackberry Dumplings






Blackberry Dumplings

1 qt Fresh or frozen (loose-pack) blackberries
1 c Plus 1 tablespoon sugar, divided
3/4 teaspoon salt, divided
1/2 ts Lemon extract
1 1/2 c All-purpose flour
2 ts Baking powder
1/4 ts Ground nutmeg
2/3 c Milk Cream or whipped cream, optional


In a Dutch oven, combine the blackberries, 1 cup sugar, 1/4 teaspoon salt and lemon
extract. Bring to a boil; reduce heat and simmer for 5 minutes. 

Meanwhile, in a mixing bowl, combine flour, baking powder, nutmeg and remaining sugar and salt.
Add milk; stir just until mixed. (Dough will be very thick.) 

Drop by tablespoonfuls into six mounds onto hot blackberry mixture cover tightly and simmer for 15
minutes or until a toothpick inserted in a dumpling comes out clean. 

Spoon in-to serving dishes. Serve with cream or whipped cream if desired.

Spaghetti Bread Dinner



Braided Spaghetti Bread

This is a really simple recipe; it just takes a little planning for thawing the dough. It will take 2-3 hours for the bread loaf to thaw to room temperature or 1-2 hours for the rolls to thaw to room temperature.
Do you like bread and spaghetti? Twist them together with this Bradied Spaghetti Bread.
You will need:
  • 1 Loaf Rhodes Bread Dough or 12 Rhodes Dinner Rolls, thawed to room temperature
  • 6 oz spaghetti, cooked
  • 1 cup thick spaghetti sauce
  • 8 oz mozzarella cheese, cut into 1/2 –inch cubes
  • 1 egg white
  • Parmesan cheese
  • Parsley flakes

Spray counter lightly with non-stick cooking spray (or use parchment paper).

Roll loaf or combined dinner rolls into a 12x16-inch rectangle. Cover with plastic wrap and let rest for 10-15 minutes.

Remove wrap from dough. Place spaghetti lengthwise in a 4-inch strip down the center of dough. Top with sauce and cheese cubes. (I mixed my spaghetti and sauce together and added a ½ pound of cooked Italian Sausage)

Begin braid by folding top and bottom strips toward filling. Then braid strips left over right, right over left. Finish by pulling last strip over and tucking under braid.

Lift braid with both hands and place on large sprayed baking sheet. (or transfer parchment paper to baking sheet). Brush with egg white and sprinkle with Parmesan cheese and parsley (I added garlic powder).

Bake at 350 for 30-35 minutes or until golden brown. Cool slightly and slice to serve.

Old Fashioned Custard Pie



Ingredients:
1 unbaked pie shell (I use Marie Callendar's deep dish)
3 large eggs
½ cup of sugar
½ teaspoon of salt
½ teaspoon of nutmeg
2-2/3 cups of milk
1 teaspoon pure vanilla extract

Italian Christmas Cookies






Italian Christmas Cookies 

Sift dry ingredients. Cream butter and sugar, beat in eggs;
add vanilla and dry ingredients.


Knead and add flour as needed to keep dough from sticking to hands. 


Pinch off dough, roll in your hands to form a log and then twirl into shape. Place on greased cookie sheets. Bake at 375 for 10 minutes.

Icing
2 cup sifted confectioner’s sugar
2 tsp. vanilla
6 tsp. water
Stir until creamy

Dip cookies into icing and sprinkle with trim. Place on wire rack with wax paper on counter to collect the dripping icing and sprinkles.


Icing Alternative

1 In medium bowl, mix powdered sugar and butter with spoon or electric mixer on low speed. Stir in vanilla and 1 tablespoon of the milk. 
 
2 Gradually beat in just enough remaining milk to make frosting smooth and spreadable. If frosting is too thick, beat in more milk, a few drops at a time.

MEXICAN TORTILLA CASSEROLE

1lb. ground beef
1/2 cup diced onion
1 pack taco seasoning mix
2 cups shredded cheddar cheese
1 can refried beans (they spread easier if you warm them in microwave)
1 cup prepared rice (I used Minute Rice)
1 can Mexican blend corn (DRAINED)will only use about 1/2 can
4-5 large flour tortillas
8 oz of thick chunky salsa (your choice mild or hot)


Spray a round cake pan or casserole with cooking spray

Brown ground beef and onion and drain 


Add taco seasonings and cook according to package direction


Lay 1 tortilla in bottom of baking dish and spread 1/3 of beans on it Top with 1/3 of the meat and sprinkle on some cheese .


2nd layer tortilla, 1/2 the rice, 1/2 salsa, 1/2 the corn and cheese


3rd layer tortilla, 1/3 beans, 1/3meat, cheese 


4 layer tortilla, beans, meat, corn, rice, salsa, and cheese


Bake covered with foil at 350 for about 40 minutes uncover and bake 10-15 minutes longer. Let sit 5 minutes before cutting . 

After baking top with sour cream,diced onion and shredded lettuce if desired
